Try using chicken thighs next time instead of breasts.  Lots more flavour, and they're harder to f*** up.

I’m peculiar with my meat, if I see bone or see say the shape of a leg, I think this poor thing was alive once and has been hacked to death. :lol: I can’t eat chicken drum sticks or wings or meat on the bone, unless it’s ribs. It’s the same when I see fat on meat or a bit of blood. Puts me right off. Give me the meat, no bones, fat or limb like s***. I even worse with fish. I think it’s because I used to work in a fruit shop right next to a butchers and a fish stall in the Grainger Market.

Thighs under the grill for a few minutes at the end to get crispy skin.

Had this a couple of times recently. So easy and so nice. Added peas to the rice and grilled the chicken at end as above.

No lie, last week after a shop run I’m trying to squeeze some freeezer stuff into the freeezer and I open the ‘meat’ draw and saw a frozen baby octopus in a bag, a few whole fishes and a bag that said shark. It was f***ing shark meat. My wife’s African originally so she eats all kinds of animals which I knew about, shark included, but in my house, in the freezer and f***ing octopus too? I threw it all out. She went spare. She went to the wheelie bin to fetch it back out. Apparently that s*** was expensive. The octopus thing could stay but don’t ever make that for me we agreed. The shark meat is forbidden, I see it again and I’m packing me bags.

Felt inspired to cook outside of our usual asian/italian comfort zone after eating at a posh french restaurant, so went out and bought some fancy ingredients (Celeriac, Samphire, fancy greens) and tried to cook them all into one meal :lol: End result:

Sunflower seed crusted roast tofu with celeriac puree and parsley gremolata:



Mixed chopped greens with smoked almonds and sourdough herbed breadcrumbs:



Roast new potatoes with whole cumin, samphire and peas:

A splatterhouse turd done in the manky toilets of a discotheque, brought on my the consumption of cowies or toot.

That sounds lush, I had samphire for first time at Christmas and had it a couple of times since.

1st attempt at enchiladas last night.  Fillings was chilli sauce with chicken, peppers, onions and jalopenos.
