yeah wife's making all this good food from these great cookbooks that she's been buying; the black bean soup was insane. The other night she did tomato basil soup from scratch too.

Depends where you get them from tbh, nobody seems to have any idea what a Burrito is meant to be. Fajitas are just Fajitas with rice in them in some places.

Sort of similar, but no. They generally have rice and/or beans instead of onions, peppers, tomato, etc. They're generally larger than fajitas, more tightly rolled (by them and not by you) and the innards aren't served sizzling on a skillet.

it's more of a catch all term for any filled tortilla that's tightly wrapped. Fillings will vary based on preference.

taco - smaller, crispy fried tortilla.
burrito - larger soft tortilla, tightly wrapped
fajita - self made with fixins served seperate, large soft tortilla, loosely wrapped (open ended)
quesadilla - tortilla topped, grilled, then folded in half
chimichanga - deep fried burrito

Taco is served in small folded flour tortilla or hard corn tortilla shell.

Burrito is as described above.

Chimichanga is a fried burrito.

Enchiladas are thin, in soft-ish corn tortilla smothered in sauce and cheese - - you can't pick it up to eat it.

 Quesadilla is cheese and potentially other stuff in a folded flour tortilla cooked on a skillet.

Is New Mexican cuisine referring to modern Mexican food, or is it Alberquerquean recipes?
