Probably posted this before but spaghetti is by far and away the worst pasta shape.

It's the best with bolognese. If you get it right.

I find spaghetti and linguine good for lighter lunchtime pasta dishes. Something as simple as fresh tomatoes, garlic, chilli and basil.

Standard soffrito plus garlic, oregano, thyme, small amount of beef stock and a little chilli.

Tagliatelle is probably the only pasta I'd bother with. Oh, ravioli and tortellini etc too probably. That's it. Penne and Rigatoni are gash.
And in the end, the love you take, is equal to the love you make.

It's tagliatelle, photo does make it look like papadelle though.

Pretty sure vinegar is available in the south these days.

I grew up in the NW, and it was not a thing there.
Also, it's - as far as I've experienced - not a thing down here either.
I'm not slagging it off, it works. But the north east was the only place I've ver lived on these isles where these two ingredients mingled.

I'm a southerner and can confirm that Walker's do two versions of ready salted in green and red bags, and you get a funny look when you ask for salt and vinegar in the chippie.  Actually, I can't because that's a ludicrous claim.  Of course we have vinegar.

Just had a Jamaican takeaway (jerk chicken & brown chicken curry w/ sides) from Lev’s on New Bridge St for the first time.

Would recommend.

Tired now but served with rice and flatbread plus poppadoms. Was delicious. I can't move now
