£12m for Shelvey and £5m for Hayden imo.

Maybe about 3 years ago. I reckon we could still get around the £20m mark for Shelvey and currently Hayden would be valued closer to £10m.
We won't get Hayden's actual value for him because its so obvious he wants away

Chambers would be a decent replacement for Hayden in the summer.

Is he a defensive midfielder now?

He plays there for Fulham. I'm not sure how good he is playing as a defensive midfielder I just thought because he can play in a number of positions he would be a player Benitez would like to sign.

Brighton offered £12m for him at some point in one of the last 2 windows.

That's the first time I've heard of that supposed transfer.
